The "change for a $10 bill" trick is confusing enough that it works on people not good at accounting in social situations.
Ask if person has a $10 bill for 10 ones. Give them 9 ones for their 10, but tell them to count to make sure. Correct your 'mistake' by giving them another one. Then immediately put the $10 bill they gave you in exchange down on the ones and say "It would be perfect if you have a $20 bill for the change", pointing at the ones and the ten.
If they hand you the $20 bill in exchange for the ten and ten ones, you just scammed them out of $10.
He should ask her to bring $200 (in 10's & 20's), seat her at the kitchen table. Repeat her process until she realizes that her logic is fatally flawed, or, she has lost all of her money. Experience is a cruel but effective teacher.
Which makes me wonder how many times has she shown this "trick" to her friends & coworkers? Her coworkers: "Hey Laura, show us that cool money trick again"

He, on the other hand gets his $20 back, plus another $10. He is now at +$10.
