I had issues with water. I figured out it was because I was drinking out of plastic and re-using the bottles forever. The plastic begins to break down and you dose yourself in plastic more. I found myself constantly needing simultaneously more water and less.
Then I started using a mug for my drinking glass and I'm drinking way less water and feeling way better.
Not only does the plastic break down, but it gets dirty on the inside where bacteria can grow. Even if you wash it it doesn't help that much. If you scrub it, it will get scratched, leaving more surface area for bacteria. Eventually you'll have your own private petri dish for your water to sit in.
Glass is best, and wash regularly even if just drinking water from it.
My mom used to have a small glass jug of water by her bedside. She rinsed and changed the water every evening. I once ran my finger on the inside and notice a slimy biofilm on it. After long-term use even clean water leads to biofilms on glass. So a proper scrub is needed every once in a while to avoid the petri dish effect.
See, but you don't want plastic around that long anyway. I used to use bleach water when I was drinking out of a big glass jug back in the day. In the end it wasn't practical using something that big. But bacteria love glass more than plastic. Plastic is like automatically half sterile because it's toxic. But bacteria slimes love glass so its a good case for bleach if you have something too big or vacuous to be cleaned well by a dishwasher.
^This. This was going to be my suggestion as well. Most of what you're talking about seems linked to an iodine deficiency. I switched to purified alkaline water a few years ago and take iodine in liquid form every few months when I feel like my allergies or fatigue seem to be getting worse.

I'd think about getting a water filter that would filter out fluoride and chemicals that "sanitize" the water, like chlorine. I never drink straight tap water. It's horrible.
But the bottom line is that you should only drink when you're thirsty. You don't need to load up and over-consume it because your body doesn't need it except when your body tells you to.
It could be a lot of things, here's my take on it:
Try adding electrolytes to your water and see if there's a difference in energy levels, both physical & mental. I usually buy Hydralite effervescent tablets.
That's how I figured out I had a magnesium deficiency. I take vit D regularly and it uses Mg when being metabolized so it was draining me of an essential mineral.
Potassium also has a positive effect on mental energy.
Find a White non kike doctor and get some tests done. They can check your blood and stick tubes up your butt and down your throat to see if there are any issues.
Taking nutritional suggestions or playing guessing games is for retards. Get a high end HTMA test and stop guessing what your levels, ratios and deficiencies are.
That being said it’s almost impossible the water has anything to do with it, unless you’re drinking distilled or reverse osmosis water.
Get all the vitamins that have been mentioned in other comments, and also start taking boron. You need 6 mg/day. It will make a huge difference in how your body handles water, especially if you don't feel thirsty like you used to.
