a version of the ADJUSTABLE GRIP HITCH, which works just as well - but this looks much nicer imo

Clove hitch and modified clove hitch is all you need for boats and horses and camping hammocks

Clove is a great temporary knot, but you definitely need other knots for other purposes

Sail with two knots? [doubt]

Bowline, double overhand stopper, rolling clove hitch, reef knot, sheet bend, round turn two and a half hitches, cleat hitch and maybe a few more are minimum.

With knowledge of two knots you are relying on someone else to set your yacht up and hope that nothing comes undone or your dropping the epirb in the drink.

I hear what you are saying, but drifting around on a raft is hardly sailing. Thats like getting in a life raft and calling it sailing.

Hōkūleʻa are also near coastal canoes with a speed of about 4knots/4nM and they had more than two line knot types utilised.
