What do you consider an acceptable age gap between an older man and a younger woman?

Its whatever is comfortable for you. Remember in times past it was quite common for an older man to marry a younger woman as he was in a position to provide a stable home while she was capable of bearing children. Worked with a bunch once where the age gap varied from 10yrs to 30yrs. All had great well mannered children.

The age old rule of thumb is that the maximum age gap is the age of the older person divided by 2, plus 9.

A 18 year old can date a 18 year old (18/2+9=18 No Pedos!)
A 30 year old can date a 24 year old (30/2+9=24)
A 50 year old can date a 34 year old
A 60 year old can date a 39 year old
A 70 year old can date a 44 year old
A 80 year old can date a 49 year old

Actually, on second thought, age doesn't matter at all, if two people fall in love and are the same kind... I noticed you American men calculate a lot, that's not good, will not make you happy.
I fell in love with a guy when I was not even 16, knew zero about him, I just seen him and that's was it. And even I thought then he is much older. We were together after about 25 years, all the time deeply love with each other, getting together really good. He was just one year older than me, but for what I cared, he could be any age... but just enough different interests that was all the time interesting. I do think soul or character it's that matters, not the age at all.

31-35 = 10 years
36-55 = 15 years
56 and up = divide 2
65 and up and a billionaire = divide by 3

when man is younger than 30, 5 years is maximum I'd say, over 30 y old it depends how smart, or better to say wise is one.
