"Would you rather go to X or Y?" works great when picking a dinner spot. They get to feel like you're taking care of planning while still including them. A choice between 2 things is an easy decision.

Sometimes they think about it for a minute but they always just happily pick one.

I didn't listen to the general advice of "wait three days before reaching out" after a date. Sent her a text a bit after...helps that the first date lasted several hours without either of us noticing.
