The banana is not drinking the water. The water is sealing the open end of the stem, preventing the drying of the skin. Same thing with how they stand asparagus up in a shallow tray of water.

Mangos and bananas make everything near them spoil quicker, as they release a gas called ethylene.

Bananas should go in the bin and water isn't doing anything to stop them from rotting.
