Sounds like some urban rat living on gubmint cheese in their chicken coop.

There’s variety of cheeses available in North America and a lot are local.
The real issue is finding one that uses raw milk and real rennet. I end up importing some of my cheese from Europe because of this.

They are found at co-ops where you have to sign a waiver to buy real milk.

This isn't true at all. We've always made a lot of our own stuff in rural areas. I grew up on fresh cheese, and goat cheese. We make our own wine, soap, smoke, can everything, etc. Its always been big business too because some sit out by the highway and sell this shit to all the touristy yuppietards and canadians driving through. You wouldn't believe the shit these fucktards will pay big money for. write some stupid shit on a board and pound an old rusty nail in it and they will buy it. Not to mention old furniture. Its bizarre, the rich want poor furniture and the poor want rich furniture.
