That is not cochineal. Those are Armadillidiidae, which are known to every kid in the US as a pill bug, a roly poly, or a sow bug.

This is cochineal, which is an insect that was used in Mexico for centuries for its red coloration.

In a way, buying cochineal products is helping the remaining farmers (usually family-based) keep the tradition alive, and if it helps them stay in their own countries, all the better.

if not mistaken, cochineal was popular as a natural red dye and food coloring until rockefeller monopolized the market with the cancerous petroleum product red-40.

Actually, bugs creep me out, although when I was a kid, I did like roly-polies. I looked that up just for the purpose. Other than that, I'm more of a blowhard and a know-it-all windbag.

I seem to remember cochineal is used as a non toxic red food coloring, but I might be wrong. In my memory it is derived from an insect.

Looked it up, and memory is correct. From wiki

The cochineal (/ˌkɒtʃɪˈniːl, ˈkɒtʃɪniːl/ KOTCH-ih-NEEL, -⁠neel, US also /ˌkoʊtʃɪˈniːl, ˈkoʊtʃɪniːl/ KOH-chih-; Dactylopius coccus) is a scale insect in the suborder Sternorrhyncha, from which the natural dye carmine is derived. A primarily sessile parasite native to tropical and subtropical South America through North America (Mexico and the Southwest United States), this insect lives on cacti in the genus Opuntia, feeding on plant moisture and nutrients.


Apparently the alternative red food dye caused cancer, so I've always given this one a pass.

I look at it like humans don't eat insects as a prferential food sourcr, but we do get them in our food. Always have.
