Something random I was thinking of. Does people's center of mass shift when they get fat? I feel like you can tell from a gait that someone is fat, but I'm not sure what I'm picking up subconsciously there.

Probably, but you're overlooking other factors that fats have.
Most fats have terrible pain in their back, knees, feet, ankles, etc. All these things affect gait. Most do not have the muscular foundation to support their fat.
