The person, who had been sitting next to her, had said he was going to take the plane down. The womans correct response should have been to quietly get up and go tell the stewardess that. Then she would have had a free seat next to her on her flight (which would have been delayed had dude confirmed to the stew that he was planning on taking the plane down)

My theory is that she was next to a guy who was super high on drugs. Maybe someone with PTSD who took a lot of sedatives before the flight, maybe someone on shrooms, IDK, but if they were catatonic or not responding to normal stimulus then it could easily weird out the person next to them. Maybe the lady was already distressed enough for whatever reason, and a druggy acting weird was all it took to freak her out.
