The reason why Jewish religious law prohibits Jews from doing certain activities on the Shabbat, is because those things are not to be done on the Shabbat: Hiring or otherwise enticing non-Jews to do those things is profane and/or abominable.

If you train a dog to do something useful like guarding sheep should you prevent the dog from doing that on the Sabbath?

Or so their logic goes, I believe.
