Gluten is hard on the gut, can promote leaky gut syndrome which leads to food sensitivities. Modern wheat has higher gluten than other strains. I have zero problem with people who want to avoid gluten. I dont think its woke. But gluten free bread it pretty crappy.

Shit's expensive so I freeze it, if I'm gonna thaw it I might as well toast it, regular bread doesn't freeze well, thaw well, or toast well in comparison, I prefer the gluten free stuff at this point but I have had bad gluten free bread, I recommend aldi's offering. I use to waste most of a loaf, but since gluten free freezes well I have 0 waste.

Research suggests that about 6% of the U.S. population is gluten intolerant. It's more common than celiac disease, which affects about 1% of the population.

Is it really less than 1% that are coeliac? I knew it was more common among Irish people but never realised it was so low globally. Loads of people here have it, and many more (possibly myself tbh, but it’s pretty mild if I have it) refuse to get tested for it cos you can only drink cider if you’re coeliac. (Obviously there would be nothing stopping anyone diagnosed coeliac from drinking beer or stout, but for some reason being told not to drink beer or stout anymore would be enough to put me off getting tested.)
