It's because planes use mil-spec bolts, and the military, and most aerospace companies use SAE. Although that's been starting to change in the last couple of decades. Regardless most airframes in use, especially in the commercial world are from the 70's, 80s, and 90's.
Yeah, since aviation started in U.S.A., U.K., and Germany, and we were at war with Germany during the aerospace boom, they just settled on SAE bolts as the standard.
