That's not true. I worked in a pizza shop for awhile, I made the dough. We used 50lb bags of enriched flour. After the dough was made we rolled it into different sized dough balls, depending on the size of the pizza it was going to be used for. After that it went into a proofing oven, which is basically a cabinet that's really humid and temperature controlled at about 90°. After that the dough would go into the cooler for 24-48 hours before it was usable. What's your experience making American pizza? Did you work at some fast food place?

No I just cook food, that's my experience, I always assume the worst. Honestly this is a surprise to me. Pizza places that use normal dough should advertise it.
Same. Worked at a mom and pop and it was the same process. Owner taught me how to make pies, storms, and calzones too. We got shift meals as well. This was while I was mostly a driver / dishwasher,and occasional cold prep. He just loved teaching.
