Why would you use a 3/8 SAE bolt, over a M10 bolt?

The only thing I can think of is that .47mm difference means the bolt weighs slightly less, but then the hole for the bolt is .47mm thicker and that extra structural material would make the part heavier. This could mean slightly more structural integrity at the joint, allowing you to take weight off from somewhere else, or move weight to a more advantageous position.

Because they are cheaper and more readily available.

Duh

most manufacturers have phased out sae for automotive and machines so always keep track of your bolts.most bulk bolts are sae. i use almost exclusively grade 8 nc bolts for just about everything i build or fix. reverse threads, grade 5, fine thread, etc are far less common.

I hate the metric shit. I can tell a SAE bolt or nut from across the room, same with the wrenches and sockets. So much time is wasted digging through metric nuts, bolts and tools.

I have no problem with either. My cars use metric, my planes use SAE.

3/8-16 will thread into M10x1.5 but not the reverse. That's all I know.

Thread pitch and thread thickness make SAE a stronger fastner.
Metric is another western dilution move.
They have been eating america one decade at a time.

JIS bolts are plenty good.

The grade of material used is the most important strength factor, the clamp load is determined by the number of threads, the finer the threads the stronger the clamp load per unit length of fastener. This is why cylinder head bolts and studs are fine thread.
