Restaurants work on thin margins as it is. Someone who is gonna pay $25 for a hamburger better get great service, but at that price the Restaurant is only able to hire "living wage" help.
And, tipping is a great way to weed out the shit help without relying on costumers to complain instead of simply not coming back.
There are a few places in Austin doing this. I know of 2. Both have good food, but the service is horrible and now the higher prices make those places not worth going to.
It'll bother them. The left assumes there are infinite money machines everywhere so when they say "door dash should just pay their workers more" or whatever, they don't realize their asking for higher prices.

It used to be that unions were a good thing. Then unions started getting political and controlled by men in suits. I don't believe the union institutions are inherently bad.
