I didn't have much luck with water kefir. The grains acted healthy, but they kept losing mass, not growing, despite following all the recommendations online. I've been meaning to try jun and natto (can you believe the Amish store carries adzuka beans, of all the places?), but my apartment has a mold issue; it's what killed all my attempts at growing mushrooms.
I know. That's what led me to believe those distilling machines at the store aren't all they're advertised to be. Because of that, I get my water from a well-owner outside of town, now; maybe that will prove the key to quality ferments.
