I made eggs benedict yesterday. It was delicious and surprisingly easy to make

It requires only four things: poached eggs, English muffins, Canadian bacon, and Hollandaise sauce. Poaching eggs properly can be tricky if you've never done it before, but it gets easy with practice. Always poach eggs in water, never dry, and leave the yolk a bit runny.

This is the recipe for Hollandaise sauce I use. I used to think it was difficult to make, but I tried this one and it worked perfectly and it requires only a few ingredients.

3 egg yolks
1/4 cup water
1 to 1-1/2 tablespoons lemon juice (try with just 1 tablespoon at first, and adjust to taste for later preparations)
1/2 cup butter, melted
salt and pepper to taste

In a double boiler or metal bowl over simmering water, constantly whisk the egg yolks, water and lemon juice until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Reduce heat to low. Slowly drizzle in warm melted butter, whisking constantly. Whisk in the salt and paprika until it is thick and creamy.

This will make enough sauce for four eggs.

Fry the Canadian bacon until lightly browned. Toast the English muffins to one's preference.

I prefer using a double boiler because it's easier to control and has easy clean-up. Don't bother with Knorr's packaged mix, and the kind you buy in a jar is overpriced. This is easy enough for anyone to make.

hollandaise takes some skill. If you can master that without it turning you're doing well. I love Eggs Benedict.

I most enjoy doing things like this when we take the Grandkids camping. They never know what Grandpa is going to pull out of the fire. It's like a kind of magic.

Peach cobbler, from scratch, done in a dutch oven in a campfire is magical. It must be because every time I make it, shortly after lifting the lid, it completely disappears.

Adding vinegar to the water will make the egg white coagulate instantly, makes it easier to cook them runny as they have a decent pouch around them this way.

For lazy Sundays, Knorr makes the best hollandaise powdered mix.

I didn't know that. I'll try it with a little vinegar next time. I agree, Knorr is the best of the mixes and it's good, but it's not as good as fresh. Definitely good Sunday mornings.

Never had/or made, but along with vinegar, stir the water into a vortex before dropping in eggs

Pro-tip: When poaching eggs, crack them into coffee mugs while you're heating the liquid.

When you're ready, you can easily and gently pour them in all at once without breaking them.

You can also get the small double boiler poached egg skillets. They technically steam the eggs but in eggs benedict you're not going to notice.

My mother had one. It was all stainless steel. It was probably a wedding present she received in 1957. I remember her using it periodically. I've been looking for one of those, but I haven't found one I like.

This is the exact poaching skillet you want. The brand name is highly likely to be just bullshit but this is the design you want. It pipes the steam directly onto the eggs and the insert is flat bottomed so you can put it in an air fryer. On of top all of that, the skillet bottom is a skillet unto itself which means you can cook in it directly. A bit small but it works.

It really wasn't any research at all. I have that exact same skillet. I use it to poach and "lazy fried" in the air fryer. All I needed to do was look for "egg poach skillet" in an image search and find that specific one.

Like I said though, it's really just a steamed egg. Poaching is different. Use the wine glass approach for easy poached, the skillet for lazy poached and put it in an air fryer for lazy fried. You can't tell much of a difference once you slather the heaven that is hollandaise sauce on it.

Dude, try a green fried tomato instead of ham, top with fried onions, a pinch of dill, and a shake or three of sumac. Fucking heaven.

I forgot that I do usually add a slice of tomato. That makes a huge difference. Not in to onions, but dill sounds really interesting. I love dill on a lot of other foods. Will definitely try that. And sumac! Fuck yeah! Great ideas. Thank you.

I make this a lot for my wife... 2 tricks I lean on:

And crack the eggs into vinegar while the water's heating and leave there till they turn white. Helps set the whites, makes the most perfect pouches of poached egg I've ever accomplished (doing this 4~5 times a year for decades). Then just dump everything into the water (no "vortex" needed).

It's all right, Paul. I'm sure he didn't mind. His career as bacon was already decided well in advance. And why give up meat? People have been eating pork for thousands of years. Unless it's eaten without being properly cooked to avoid trichinosis, it's safe, healthy, and delicious.
