Seriously though, it's impossible to develop the same bonds with an older woman than you would a younger one. 2 aging adults with baggage getting together doesn't hold a candle to sharing first time life experiences with someone at a young age (having children, experiencing things for the first time together, going through hardships together, etc).

I didn't interpret it this way, and I don't think Stefan intended it to mean what you're suggesting (his last sentence seeming poorly-worded).

Here's an analogy. Coupons.

You have a coupon that is good until the end of the month. You could use it before the end of the month, or if you neglect it, you could try to negotiate with the cashier to accept it anyway, say, if you show up a day late.

All else being equal, you should use it while it's good. Crucially, 'good' means while it is obviously 'live' and 'timely' for that intended use. Stefan is saying that beauty is a sign that works a lot like this. Beauty is a signal that communicates the time in which your 'coupon is doubtlessly good'. It doesn't mean you couldn't possibly redeem it after the date, but at the very least, you know there's a little more complication after that date. It also doesn't mean that nobody will (or could) love a woman who isn't young.

Women shouldn't disconnect the sign from what it means. Beauty is not a commodity to be used solely for having fun. Beauty is not an instrument for your enjoyment - it has a natural end. Beauty is expensive. It's a display meant to serve a function, which is not the function of 'having fun' (evolution doesn't 'give' a fuck about such things).

Stefan is saying: take nature's cues categorically, as what they are. Youthful beauty is about doing certain things while the 'coupon is good'. Logically, that doesn't entail that those things can't be done after the coupon is out-of-date, but ceteris paribus, you ought to eat the fruit when it is ripe. Now, ceteris paribus arguments are limited. That's the point of 'all else equal'. There are many actual situations in which 'all else' isn't equal. Men do fall in love with older women - there are all sorts of things that 'break the rule'. But that doesn't mean we shouldn't hold the rule, and all else equal, live by it. I think he is responding to the fact that TOO MANY PEOPLE are shirking the rule.

The store clerk might be able to redeem an out-of-date coupon for a nice, respectable person, but things are going to get bad if thousands of people show up wanting the same favor. Stefan's point (implicitly) is that it's a rare thing for nature to do us favors, so if we know the rules, we should probably just follow them. Too many young women aren't, for ideological reasons.

He's not wrong, if you're a woman over 40 looking for love, look for ot in your 20s. A man can continue to love a woman as she ages, but can't fall in love with someone who's already too old.
