Viruses hijack the host cell's functions to reproduce. Outside of a host, a virus is a protein encapsulated or capsid and must make significant changes to adapt to the DNA of a host to replicate. There are more people, so it stands to reason most viruses of a zoological nature make the jump to adapt to a new host type, where there is likely more 'real-estate' to replicate.
Viruses cant jump back and first willy-nilly to any animal at any time.
Last I checked pigs, dogs, birds and humans all have wildly different DNA.
