Some web sites e.g. politicians/newspapers, have an on-line form you can fill out as distinct from sending an email to another email address. If I complete such an on-line form and lodge it, does my default (?) email kick-in and send the form so that the recipient actually receives an email from my email address so that any alt I've used in the form (different name/different email address) shows I'm lying?

Don't answer on-line forms or questionnaires. DON'T give anyone your information. It's none of their business. Keep your privacy. You can do without whatever they're trying to give/sell you.
