Farmed varieties for escargot are typically Helix pomatia, Cornu aspersa, Helix lucorum, Iberus aloneness and Elona quimperiana.

The common snail is Helix aspersa and usually carries parasites such as rat lungworm.

In France only the Roman snail (Helix pomatia), the garden snail (Helix aspersa) are consumed. Aspersa must be farmed, it has to be cooked for several minutes at very high temperatures, then disguise the horrible flavour with lots of butter and erroneous amounts of garlic.

It is not safe to eat snails in your backyard, which is why I encourage paul_queeri to eat them.
