First cabbage harvest

Kraut harvest. Ten times this left to harvest.

Intercropped them between my potato rows, with a good dusting of mayweek, cilantro, and radish seeds. My first year to get good dense heads of cabbage that weren't tunneled throughout by cabbage loopers, and I lost no garden space to them.

You going to ferment the sauerkraut?

I've done lactic acid fermentation with pickles before and they were unbelievably delicious.

Never tried making sauerkraut, though it's definitely on my list.

Fermented sauerkraut is so easy you'll wonder why more people don't do it.
Shred, layer, and salt, with the occasional mash every few layers.
Most common (and almost the only) problem you may encounter is spoilage from cabbage that finds its way above the brine, which can be solved by using weights or, as I like to do, springform gaskets made from milk jug container material.
Kahm yeast is a distant second.
Both can be remedied by removing with a sterile utensil and replace any discolored brine with fresh.

They look great, I love a good sauerkraut. I only have a couple 4x4 beds and might do a couple soon for fall harvest.
A dish I like to make with cabbage is Egg Roll in a Bowl. Here’s the basic recipe but you can adapt it many ways.

Plant it in winter. It's a cold weather crop and does extremely well when the nights are still hitting hard frost temps.
