Why? Because those are the guys from whom all the "powerful" people derived their power from, their power simply being described as they the cops and soldiers do what they say.
If the men with guns would stop using their real power for enforcing the system, it would collapse overnight.
If they would turn on the elites, they would quickly become the new elites.
You can't be anti-government and pro-police, the two are synonymous.
The law enforcement isn't merely a part of the establishment, they are more a part of it than the people we like to combine about.

The leftist cry of abolishing the police was a ploy to get the right to act in an equal and opposite way, rather rather saying "hey, they got a point here" you instead act as they predicted you would, and uncritically took the contradictory position.
It's telling that these "white nationalist" terrorists never go after cops, uts also telling that a lot of "white nationalists" are tripping over themselves to protect the police from entering the crosshairs of our wrath.
The "Islamic extremists" created Islamophobia overnight by targeting police, they threw grenades into police stations, they burned cop cars, they actively went after cops for beatdowns, and they ultimately got their way, largely due to this.
The Rotherham police were unwilling to investigate the sex slavery operations because they knew that if they upset the Muslims, they'd be seeing themselves or their coworkers being killed or seriously harmed.
The whole racism bit wasn't anywhere near as much of a factor compared to the fact that an angered Muslim could take more of them out, perhaps their own lives would be ended as a result of going after these operations.
Nothing trumps self interest in the way of ruling human behavior. Nothing. There's no consequences with greater impact than those personally felt.
Muslims knew this, that's how they won. With repeated use of violence against those who truly were in charge of making the rules, they fostered the social change which favored their goals.
Thing is, they went to far with it, the same could be accomplished for us by way of peaceful, legal, and anonymous means, we can spur change by after the police, but without a spot of violence against them.
How? Posters. Websites. We make a public notice of who the local police are, posting their faces and identifying information, we can essentially name and shame them, without us needing to say anything but "see this guy? He's a cop, here's how you know who he is when you see him".
Anti-police sentiment is still very high, so we remove the police, and we step into their role, as the community still needs lawkeepers, we get a hold on government in this way.
Its easier to go after cops than politicians because of the following reasons.
First, there is much less incentive to become a cop, when the job becomes difficult or dangerous enough, they will see a hemorrhage of police officers and a difficulty with getting new recruits.
Second, cops are accessible, they live their civilian lives among us, having the negatives of their career choice follow them into their lives off duty is major blow, and simple shunning is a huge incentive to leave the force, people stop associating with them, businesses refuse to serve them, their relationships cut ties with them, they become ostracized in their communities.
What the hell are they gonna do about it? Force people to interact with them? We need to pile on the stress, and a mere identification is more than enough of a stressor.
We propose ourselves as the substitute for police, and as we don't enforce bullshit laws, and do our jobs with greater competency and concern for the good of the people, then everything becomes better under us.
We assume power over a community of people, that's a power base that we can cultivate, grow, and expand.
Same goes for the national guard, which we should prepare for before we take power, as we will know they will be coming to oust us.
If we hold strong, we win.
The countries of the world are too weakened right now to stop us, especially if we have this kind of thing going k multiple places at once.
