I never saw a picture of Earth from space far away enough to see curved water. All the pictures that are that far away are computer generated for movies and stuff. Try finding two of them from different sources and compare them, to see what I mean.

Nobody has ever taken a photo of curved water on the ocean. There are millions of photos of a flat plane horizon on the Ocean though, stretching for 100s of miles before the cloud deck merges with the horizon due to our perception which compresses images the further out they go until they disappear from our vision altogether. Zooming in with an ocular device will bring them back into vision because they don't disappear over a magical globe edge.

When they say "water seeks a level" they are referring to an equal potential energy. The equation ;

PEgrav = mass • g • height

Where mass is a constant (water) and g is a gravitational constant. Without gravity water forms a sphere due to its surface tension.

If I have water in a container on a counter, the water will find a level on that counter in that container. If I bust the side off the container, the water will pour out onto the counter and run off the counter onto the floor where it will find its level on the floor. It's all relative to the center of the earth
