Pheasant's Back. Tasted great with a strong mushroomy nutty flavor, hard to explain exactly.

Will be going back next week to get more

Edit: really found them off the trail, deeper in. I usually let my intuition tell me if I should go off trail and take a look, this time it worked!

If they get too big(they get about 2 foot across) I use them for soup stock. these are the perfect size. I soak them for an hour to kill any critters crawling around on them and I usually fry them up in garlic butter or I deep fry them. Most Of the time I use the garlic butter and throw them on top of a steak or I will make a heavy cream sauce and make a pasta dish of some sort.

So I just made them for dinner with:
Salt
Pepper
Cayenne
Butter
And onions

The mushrooms and onions were both nice and soft but the mushroom flavor was so strong and overpowering. Any way to combat this?

The one mushroom I cooked for lunch to test was better, but I cooked the pieces for a longer time and they were a bit harder.

Also, I cut the mushrooms into pretty thin strips, maybe a quarter inch thick, 1 inch long.

This is why I always bring a Jew or Nigger along with me when I hike. Someone needs to taste test the forage.

Shrooms are great! Gotta know what you're picking though. A good guide to shrooms with nice color photos would be a great addition to any book collection.
