I'd go with a combo of microgreens on shelf stacks and potatoes. Also work in an indoor fish farm for meat. I hear rabbits are easy to breed and raise indoors too. Maybe even consider some egg laying chickens, if you have the space (you really don't need much, but it can smell). If you pulled all of this off, you'd have a very balanced and nutritious menu available to you. The electricity cost will be significant though.. lots of lights and stuff.

LED grows micro greens just fine and doesn't kill the power bill.

Potatoes. Good source of many amino acids.

And minerals

If you just want pure calories it's hard to go wrong with potatoes. You can grow them with hydroponics, aeroponics, a bucket.. pretty much anywhere. You could probably grow them in your gutter but that might cause problems when it rains.

Cody'sLab, and watch his hydroponics videos. He uses 5 gallon buckets, and a bit of hose to set up his hydroponics. His channel is on youtube.

you keep the jar covered so no sunlight to feed any algae. also, you don't add any water, so as the solution gets used/evaporates, there is room for the top roots to get air.

You'd better develop an appetite for pigeon and squirrel and know how to fish if you want protein.

Good spices make almost any meat palatable. Spices are something most preppers neglect to stock up on.

Garlic powder, black pepper, salt and barbecue powder will make anything taste acceptable

It's not a crop, but you can raise quail for meat and eggs in any available space, even an apartment if you wanted to go that route. I've got a ton of info to get you started.

My brother raised quail a while back and the scramble eggs were gourmet or better, the only drawback was that it took 20eggs to feed two of us but that protein stayed with me for the day until dinner. I took the eggs and mixed them with butter and about one Oz of whipping cream and cooked at high heat while constantly stirring in the pan, you don't want to brown the eggs, it's best a little snotty, now combine a slice of leftover prime rib roast from the day before with toasted rye bread and diced potato cooked in a sunflower and butter combination spiced with paprika and black pepper and you're flying high...be sure to ground your coffee and squeeze two grapefruit for your drink...then finish off with strawberry rhubarb pie and one scoop of premium vanilla ice cream. FYI...MAKES FOR A GREAT LAST REQUEST MEAL IF YOU'VE EXHAUSTED YOUR APPEALS.

That's a great way to describe the eggs, gourmet. I use egg scissors, so opening 20 is cleaner than me trying to crack just a few chicken eggs. Compared to chickens, there's a higher ratio of yolk to whites just like a duck egg.

You could get ~20 eggs a day from a 4ft x 2ft enclosure. Same footprint as a typical 90 gallon aquarium. You'd need a lot more room for the equivalent 4 chickens.

You can raise more meat per year per square ft than rabbits or chickens. No one knows you have them unlike roosters. I had s/Quail on poal when we didn't have a voat to call home.

Coturnix are the best kept (or overlooked?) secret among homesteaders.

I think the difficulty would be in getting food for the plants. When we aren't SHTF, it is easy to go to the store/web to get stuff, but when there is SHTF, where are you going to get nutrient solution?

It is difficult to grow enough of anything to make a difference.
