All seed/vegetable oils are bad. Aside from them being almost entirely GMO garbage, they're high in polyunsaturated fatty acids (PUFAs). They quickly oxidize and cause all sorts of health problems. Avoid them like the plague. Monounsaturated fats are a better. Saturated fats are what you want to eat. Animal fats and coconut oil are great. Olive oil is good too, but there's some debate on whether or not it should be heated.

The concerns with canola oil are a solvent called hexane used in the processing and also the heat used which transforms some of the monos into transfats. But its not clear if either of these issues significantly impact the product. I understand you want me to convince you. But unfortunately it is not a simple explanation, it’s long and complex. It took me years to go through the research and sources to arrive at my current understanding.
I will give you a quick and surface level reasoning. All pufas are prone to and do oxidise. This damages mitochondria in our cells. Pufas are also highly implicated in disrupting the leptin feedback loop. A natural human diet, before seed oils were forced upon us last century, comprises of saturated fat and protein and carbs. Even if we ignore the “ancestral” pov, studying our own biochemistry in depth reveals the dangers of pufas in our modern diet, not to mention the Randal cycle.
This is a highly dumbed down version of the research I have read. I’m just too tired to do a better job for Granny Helena. I would encourage you to start looking into it. Of course, you are here so you know not to trust mainstream medical establishment. But I encourage you to look at the alternative of the alternative medical research.

Yes, however, too much mono especially replacing saturated fats is very unhealthy for humans. We are warm blooded animals, our body temp is akin to the tropicals and we thrive on saturated fats.
Additionally, monos can easily convert to poly within the body and even in the bottle.

Yes, they are good and also have a great amount of vitamin E. I prioritise my cooking fats in this order: tallow, pure butter, heritage pig or wild boar bacon fat or lard, coconut oil, palm oil.

Indeed, but the same answer to canola oil above applies here. The only exception I would make is when I have no choice, for example for mayonnaise, I can use something with high oleic safflower or high oleic canola VERY OCCASIONALLY.

Correct, however, I like my science nuanced, so my understanding is one can enjoy salmon and other fatty fish in moderation. We should not overdo them like the “medical” establishment recommends. And no way in hell should we supplement with omega 3 pills. The pufa is literally already rancid before you put it on your body.
When iy comes to flax seeds, that needs to be avoided because they are seeds. Not fit for human consumption at all beyond their pufa content, seeds have mild to extreme toxic chemicals by design. Of course, if you have a bread slice with flaxseed in it like once in a long while, you are gonna be fine.
