It's because the Vietnamese young men loved motorcycle jackets full of zippers. 1950's style. They'd do anything to get an American black leather jacket. Anything with zippers was cool. IIRC it started during the Korean War, but got a lot more use in Vietnam (and appears to be a general term for Southeast Asians).

One school of thought is that it originated from the fact that shooting someone in the head with a high-powered rifle causes the skull to split open, or "unzip."

Another possible origin is that when running over an enemy soldier, the tread patterns on the jeep's tires resembled a zipper, hence "zipperhead" if you ran over their skull.
