This is canned. Good for three years, so they say. Probably more like ten. Put it in the pantry.

This is really simple. Salt, pepper, thyme, garlic, onion, celery, carrots, potatoes, top off with red wine. I use a cheap Cabernet, like tree-fiddy cheap. Here’s the link: https://www.canningandcookingathome.com/dianes-blog/pot-roast-in-a-jar

What keeps if from spoilage? All I know for preserving meat is dry it or submerge it in lard.

It’s being cooked in the jar under high pressure for 90 minutes. That kills all bacteria and seals the jar. It’s just like a can of stew you buy at the store, only better.

In a pressure cooker with a container meant to undergo the experience I assume? How do you know the right container? Will a common mason jar do?

I don’t know. I’m not sure anyone knows, really. The whole point is to have quick and easy food when you want it, or emergency food when you need it. With home canning, you know what you are eating. Just because a food is canned, let’s say, canned chili or beef stew, it may last a long time, but it might be full of garbage you don’t need.

Canning has been around so long, I guarantee the old veterans know everything there is to know about that.
