Canning beef

I’m fixin to can a bunch of tri-tip in the form of pot roast. I’ve used chuck in the past, and found it to be a bit heavy on the fat cap in the top of the jars. So, this time I am going for the leaner cut. Should work out fine from what I’ve read. I have a shit ton, like fifty pounds of tri tip on hand. Should be a long, fun day.

Wife and I do a lot of canning. Today is opening day for deer. Just got a nice doe. Venison is great for canning extremely lean and so flavorful. Sometimes we do whole pot roast meals. Time consuming but well worth the effort. It’s good to know where you food comes from.

I’d rather not handle my iPad while preparing any food product, gross. But, I will tell you, there is stuff all over the interwebs on this. It’s not very glamorous, but search it out. I may do before and after.

what sort of flavors/sauces/spices (marinate and/or sprinkle) accent/contrast well with chuck roast? So it doesn't taste like the beef in vegetable soup I guess.

Does anyone ever use beef broth (separate product from the beef)?

If you’re canning beef, why would you be worried about the flavor of beef? Chiselers is one of the best and most flavorful cuts. I guess you could can chicken...or soy.
