I've tried many cheeses in my days but isigny ste mere is the absolute best in terms of quality (Normandie grass-fed cows) weather brie, camembert or their exquisite butter which is better than president butter (which is supposedly France Number 1 butter)
though as always going to an actual cheese making farm and buying local cheese has been an absolute treat
when i was visiting my French grandmother in Entrecasteaux they had a cheese maker with aged cheese there was 2 wheels one for 20 years of age the other for 30 years of age
the 30 year aged cheese was fucking DIVINE i can't express how delicious it was with mere words alone, it's a shame aged cheese is something so rare, so incredibly rare that you really have to go to the ends of the earth to just get a taste of it

Mozzarella is an Italian cheese afaik and it’s made from buffalo milk, not cows milk. Gouda and Edam are the main Dutch cheeses, and they are both delectable.

though i think the cheese i buy is made from Cows milk (not the shitty american cows, but the Grass-fed, A2A2 Heritage cow milk)

Yeah we make mozzarella in Ireland too (there’s a field of buffalo down in Cork that are surprising to see) but it’s still an Italian cheese even if it’s made in Ireland because it came from Italy originally. I do love Dutch cheese though, very mild yet flavoursome. Have family over in the Netherlands and one thing that really stands out in Amsterdam is they have very few chain shops, but there’s some guy, Henri something, and he has cheese shops all over the city with these huge barrels of cheese on display. The food in the NL is really fantastic, and they’re not a country that are usually associated with fine cuisine.
