I slow roasted some once overnight at about 220* in sarsaparilla and rubbed down with brown sugar/misc seasonings. Then tossed them on the grill the next day.

I am in the same position as you but with a brisket. Not sure what to do.

As far as ribs, low and slow with a chili-power rub. Brown sugar too.

Brisket is a bitch. Much patience and time needed. I’ve only done it once and I’m not sure it’s worth it. It was awesome, but very time consuming. Here’s the recipe I used.

An old roommate left them in apple juice in a bag in the fridge for 24 hours then cooked them slow and low for 12 hours... I remember them being very good and very tender

perfect but.... crisp them on outdoor grill briefly so they are not like they are boiled

also 5 hours is enough, coverred in foil with lot of apple vinegar and water beneath ribs

then after off grill , put on sauce glaze

Marinate in coconut aminos (enough to cover), a generous cup of sherry, smash a bunch of green onions with a cleaver & julienne a decent sized hand of ginger. Throw them in as well.

Let them sit for a few hours and then deep fry that shit.

Amazing.

Cut them into about 3 ribs. Put them in a slow cooker. Dump a jar of barbecue sauce and a bottle of root beer. Cook for at least 6 hours. Falls off the bone.

Fire. Good wood for good smoke. Slow, 10 hrs. Thin layer of black pepper (mortal and pestal crush that shit) and low sugar BBQ (no corn syrup shit) every two hours.

Meat needs only itself to taste good. Meat and fire.
