Mayo - because I want tuna salad sandwiches, don't want it filled w soybean oil, and aioli is tarded simple

Homemade mayo, aioli, etc. is so much better than store-bought that it's almost not the same thing.

The biggest issue that folks tend to run into is breaking the emulsion. If this happens to you, fear not. All is not lost.

All you have to do is start over with an additional egg yolk. Then, instead of adding oil, gradually add the broken emulsion to it. Just like that, you're back in business.

For extra awesome, chop up some capers and cornichons (mustardy little pickles), add some more lemon juice and some dill and you've got a killer tartar sauce.

You are right about the emulsion, I have always found it is easier to add a little more liquid (lemon juice / water/ vinegar) when you are starting out, this way it does not get quite as thick so quickly, and once it really starts thickening, just add a little more liquid, depending upon your taste preference.

Note: Preferably the liquid is closer to room temp, but cold is better than hot.

Once you make it a few times, you can see if it is about to break.

Pro tip: Make a relatively dry tomato coulis, and use that for your liquid, it is like a sauce Charon mayonnaise.

Yeah, just add it slowly, after you have gotten it to the point where it is about to take a bunch of oil, add the first part then.

You misunderstand, that's what this thread is about. Almost all commercial mayo is made w soybean oil that I dont want. But it's stupid simple. I should have been making my own all along. And I linked to a recipe for others.
