Light is just redshifted as fuck, it's in the microwave domain now and we call it the "Cosmic Microwave Background Radiation" which shines homogeneously and anisotropically. Of course, there's no evolutionary advantage for our eyes to detect microwave or you'd get information overload.

Current agreed explanation is that because the universe is expanding not all the light has gotten here yet.
Light travels at a constant so the further away something becomes, the longer it will take for it's light to get here. For some maybe never.
Personally I don't believe the universe is expanding. Seems more likely time runs at different rates.
