I looked it up. It's unclear whether jews are so inbred this was a widespread problem, or whether it's typical rabbinic kvetching over edge cases, but mention of these people seems to focus on deciding how male and female laws apply to them, not about giving them special snowflake identities. The basic categories are:

Normal men and women

 Infertile men and women who never went through puberty, or went through puberty very late.

* Deformed men and women with ambiguous genitalia

In general the rule seems to be "if they're not a fertile male, they don't have the rights or responsibilities of a man."

When people talk about jew inbreeding it is a little strange... so the real religious type jews were studied by modern geneticist because they lived in certain areas and had almost no genetic mixing within their community and the local non jew community? Aka they are super racist and religious. So they might have inbreeding but the real jews stay pretty much Jewish genetically that is how Isreal has a generic test to see if someone can get instant jew citizenship with a genetic test.

It's complicated. On one hand traditional jews tend to be incredibly inbred, on the other hand there are liberal jews who are descended from traditional jews but outbreed as much as possible.

There's also the problem that there are some very distinct jewish populations which have been separate for a long time. For example there's ethiopian jews, chinese jews and mestizo jews. If they all count as jewish then there isn't really much of a genetic definition of judaism, any more than there is for Islam. But just as with Islam the cultural tendency towards inbreeding remains.

At any rate, the jews who invented the above rules existed within a highly inbred and exclusive genetic pool.

This part of the Talmud appears to be based in truth. The "genders" they're referring to are in fact genetic defects with physical manifestations. This stuff was written before XX and XY was discovered. FYI, among the defects is an XXY, which is obviously both 2X female and male. There are also gene expression and hormone insensitivites that cause androgeny absent degenerate queer minds and human intervention. It is a physical phenomenon. Maybe this Talmud is just being accepting of sexually disabled people rather than enabling queer degeneracy.
