If you've got a system that works then stick to it. I was just pointing out that "bringing them to room temp" is not what taking them out of the fridge and putting them on a rack actually does. If the goal was to raise the internal temperature before cooking you'd put them on a skillet or something. More contact surface. It would take 6+ hours to actually get to room temp with anything but the thinnest of steaks sitting on a rack. Air is a very poor conductor.
