Making Another Fine Pot Roast Tonight. No pics, but here is the recipe. I don’t really deviate from it much other than adding the veggies only in the last 8 minutes or so.

I’m using a Piedmontese Chuck roast and a rub mix very similar to the recipe that I already had in my pantry from smoking a pork roast some time ago. I’ve found that most of these rub recipes have the same ingredients, just in different measurements.

Nice!
I just had potroast tonight. Slightly different recipe: 3.5 hours in Dutch oven at 325. Replace carrots with celery. Replace worschestershire and wine with balsamic and tomato paste. Add sage, thyme, rosemary, mustard. Instead of cornstarch, minced raisins.
