I wasn't raised on a farm or around chickens so there's no way I would ever have been exposed to that, and I have a new respect for anyone who had to do that disgusting chore. I remember Garrison Keillor (the Prairie Home Companion guy) telling a story about slaughtering chickens as you described, and one got away after it was decapitated and just kept running.
