There are less nefarious reasons they engineer this shit with oils and gels. It has a much longer shelf life, and can survive potentially dangerous temperatures. This all equals profit margins. Even the packaging is meant to keep the products shape, should it become soft during shipping / storage.
The stupidity of waiting 24 hours to see if ice cream melts is shock value. If it doesn't melt while you eat it at room temperature, don't eat it at all.
