I hear you and I completely agree. It's more trouble than, say, buying instant potatoes, but the end result is so much better. The last time I made mashed potatoes from potato flakes, it was disgusting and flavorless, even after adding milk and butter.

I tend to cook batches of stuff I can set aside for leftovers and lunches and it's much cheaper, among other things. It comes out the way I like it and I know what's in it. I prefer my own spaghetti sauce to store bought stuff in jars.

There are some things that must be made fresh, like poached eggs and Hollandaise sauce. There's a packaged sauce, but it's just not the same. Plus, cooking with real, fresh butter makes food a million times better.
