How come you can cook on the grill. Or set a cat on fire or whatever. And the wind is blowing very clearly to let’s say the north. You can stand 100 feet to the south. Yet you can still smell it. How’s that work?I always thought smell was like micro particles of whatever you’re smelling.

The wind isn't strong enough in one direction to create an upwind/downwind scenario.
If you can smell it, that means the particles have physically reached that area.
