There was no consensus on what was canon. Different factions had their own tenets, and it was the purpose of the Councils to standardize and orthodoxy. Before that time, nothing was canon. Those books that were rejected deserved it because they were mostly ridiculous, like the Jesus infancy gospels. Unless you're trying to defend that nonsense as canon and inspired of God.
