Your phone puts out all kind of identifying RF via WiFi, NFC, and Bluetooth scanning. They build a database of devices that are often within range of each other. They then watch the app activity on each of the phones to determine owner identity. Now they have a social graph of friends and family and associated devices.
Because you talk on the phone they have a voiceprint for you.
If they want to listen to you they wait for your device to be near another device of someone you know and who is in your social graph. They can turn on the mic of your friend's device to capture speech which they then identify via voiceprint.
Your recorded voice may sit on the edge device or in a datacenter somewhere or it may get convereted to text and dropped into a huge database. Either way, they can post-process to identity your interest and opinions which they then pump into their advertising database and, highly likely, into the list of people to send to the camps when the SFHTF.
There are mitigations for some of this but I have other things to do.
