Exactly - posts like this always remind me that there is a specific enzyme only available via the consumption of animal fat that is used by our gallbladder for optimally breaking down and processing nutrients from stomach contents. Without this enzyme being utilized it can trigger a cascade of various gastro/ digestive and inflammation disorders.
Plus, fat is needed to better metabolize fat soluble vitamins etc.

Maybe there is a correlation with better health of the Japanese where fatty meat is regarded has higher quality meat.
